Ingredients

Roasted Fingerling Potatoes
1/2 lb. French Fingerling Potatoes
1/2 lb. Red Thumb Fingerling Potatoes
1/2 lb. Russian Banana Fingerling Potatoes
1/2 lb. Onions
1/2 lb. Any other vegetable you desire
1 bulb Red Rezan Garlic, or any other Garlic you desire.
1 tbsp. Rosemary Leaves, dried
1 to 2 tbsp. Olive Oil, extra virgin (if cooking in a conventional oven)

Preparation

Roasted fingerling potatoes are a delicious vegan side dish that can compliment any meal. They take about 15 minutes to prepare and about 40 minutes to roast in a conventional oven at 350 degrees F., or about 15 minutes to cook in covered dish in a microwave oven.

If cooking in microwave oven, place the veggies in a microwaveable covered baking dish; if cooking in a conventional oven, place the veggies in a mixing bowl.

Wash the fingerling potatoes and cut them in half lengthwise and place them in the baking dish or bowl.

Peel and dice the onion, and peel and crush the garlic, and add them to the baking dish or bowl.

Add the washed and cut other vegetable.

Add the rosemary and the olive oil (if cooking in a conventional oven), and mix well.

If cooking in a conventional oven transfer the veggies to a baking sheet with the cut side of the potatoes up.

Roast until the veggies are tender.
