Lentil Rice Veggie Tortilla Burger

Ingredients

Lentil Rice Vegetable Loaf
5-1/2 inch Corn Tortillas, whole grain
Ketchup or Barbeque Sauce
Onion

Preparation

This recipe can be made on a baking sheet in a conventional oven at 350 degrees F., or on individual microwaveable plates in the microwave oven on "high".

We usually make these tortilla burgers from the left over Lentil Rice Vegetable Loaf mix that had on the previous day, but they can also be made from the freshly prepared and unbaked lentil rice vegetable loaf.

Peel and wash the onion, slice the onion in half from end to end, and thinly slice across the halves.

Place up to 6 tortillas on an 11 X 17 inch baking sheet for baking in the oven, a single tortilla on each microwaveable plate for individual baking in the microwave oven. (To enlarge the photo, click on the photo or link)
Spread some ketchup or barbeque sauce on top of each tortilla. (To enlarge the photo, click on the photo or link)
Then place a layer of onions on top of the ketchup or barbeque sauce. (To enlarge the photo, click on the photo or link)
Next, carefully spread a half inch deep layer of the lentil rice vegetable loaf mix on top of the onions, being careful not to dislodge the onions. We have found it is best to apply the mix from the outside edge toward the center. (To enlarge the photo, click on the photo or link)
Then spread another layer of ketchup or barbeque sauce over the veggie burger mix. (To enlarge the photo, click on the photo or link)
Next, place another tortilla on top. They are now ready to bake. (To enlarge the photo, click on the photo or link)
If you are baking the tortilla sandwiches in a conventional oven, place another baking sheet, bottom side down, over the top of the tortillas to help keep the tortillas from drying out.  Bake for about 15 minutes. Remove from the baking sheet with a spatula, serve and enjoy. (To enlarge the photo, click on the photo or link)
If you are baking the tortilla sandwiches in the microwave oven, you will not have any of the problems of the tortillas drying out. Place the plate with the tortilla sandwich in the microwave oven, and bake on high for about 2 minutes. Open the door, remove the plate, and flip the sandwich over with a flat spatula; place the plate back in the microwave oven and back for another 2 minutes.  If you want the sandwich firmer cook for another minute, and flip over again if you want to cook even more for another minute.  Serve and enjoy.
