Ingredients

Asparagus with Lemon Sauce
1 Onion, medium, diced
2 lbs. Asparagus
1/4 cup Lemon Juice
1 tbsp. Corn Starch

Preparation

Asparagus with Lemon Sauce is a relatively easy to prepare vegan recipe that can be served as a main dish, a side dish, and leftovers can be served cold on mixed greens and veggie salad. Preparation time is about 15-20 minutes, and cooking time is about 30 minutes.

Peel and dice the onion and place in a covered ceramic dish and cook in the microwave oven until the onions begin to become translucent.  The onions can also be cooked in a conventional oven at 350 degrees F.

Wash and clean the asparagus.  Cut into bite-sized pieces and add to the onions in the covered dish.  Cook until the asparagus becomes tender.

While the asparagus is cooking, add the cornstarch to the lemon juice and mix well.  When the asparagus is tender, add the lemon juice and cornstarch and mix well.  The liquid in the covered dish should begin to thicken and the "whiteness" of the cornstarch should disappear.  Heat for another minute or two to make sure that the liquid has thickened properly.  Remove from the oven and mix again.

Serve and Enjoy!
