1-2 Potatoes, Adirondack Blue
4 ears Corn, favorite variety
2 Turkish Eggplants

Preparation

Veggie plate with Adirondack blue potato, corn, and Turkish eggplant is an easy to prepare vegan meal when we want to try different vegetables we find in the market. We found the Adirondack blue potatoes and Turkish eggplant in a local farm market. Preparation time for two adult servings is about 10 minutes and cooking time is 10-15 minutes.

We start by husking the corn and washing and cleaning all the veggies and removing any inedible portions.

Cut the potato and eggplant in half lengthwise, and place the veggies in a large baking pan with a cover. We cooked these veggies together in our microwave oven in about 10 minutes.

Serve with a large tossed mixed greens salad and enjoy.
