Vegetable Lo-Mein (Chinese Style Pasta) with Bok Choy, Green Beans, and Onions
1 lb. Fettuccine, whole grain 2-3 lbs. Bok Choy 2 lb. Green Beans, frozen French cut 3 Onions, medium size 1 tbsp. Ginger, ground Cayenne Pepper or Hot Sauce, to taste. 4 tbsp. Soy Sauce or Bragg Aminos 4 Dates, pitted 2 tbsp. This recipe will make 6-8 servings and is good as leftovers, which we like because we don't have to cook everyday. The pasta is cooked on the stove and the veggies can be cooked in either a large covered glass or ceramic baking dish in the microwave oven, or in a wok.
Begin by washing the bok choy and peeling the onion.
Place the pasta pot and water on the stovetop and bring to a boil.
While the water is heating, cut the onions in half from top to bottom, and slice each half to make half circles of onion rings, and place in the wok or baking dish.
Slice and cut the bok choy and add to the onions along with the ginger and hot sauce. Add the frozen French cut green beans on top, and cook (with mixing) until the onions are semi-translucent. If stir-frying in a wok, add a little water to prevent sticking.
When the water in the pasta pot begins to boil, add the fettuccine, mix, and cook under it reaches the desired tenderness.
In the container of a high speed blender, place 1/2 cup of water, and the dates, sesame seeds, soy sauce, and smoke flavor. Note: If there is liquid remaining in the bottom of the wok or baking dish after cooking, add 1 tbsp or more of corn starch (1 tbsp will thicken 1 cup of liquid). Cover the container and run the blender at high speed until the contents are creamy smooth.
Combine the cooked and drained pasta and veggies together, and add the sauce and mix well, which is much easier to do in a wok. Reheat for a few minutes to thicken the sauce and blend the flavors.
