Ingredients

Oven Cakes - Date and Nut
1-1/2 cups Whole Wheat Flour
1/2 cup Oats, Rolled or Quick Oats
2 Bananas
8 Dates, pitted
1/2 cup Sunflower Seeds
1/4 cup Pecans or Walnuts
2 tsp. Baking Powder
1/2 tsp. Cinnamon, ground

Preparation

Oven Cakes - Date and Nut are a great vegan substitute for traditional pan fried pancakes, and they are more healthful, too, because they contain no fat or oil. Preparation time is about 15 minutes, and baking time in a preheated oven at 350 degrees F. is about 20 minutes.

Begin by preheating the oven to 350 degrees F.

Peel the bananas, break into pieces and place in the container of a high speed blender, add the pitted dates, cover, and run the blender at high speed until the contents are creamy smooth.

Place the flour, quick oats or oat flour, baking powder and sunflower seeds in a bowl and mix together. Mix in the Banana/Date mixture and mix into a batter. If the batter is too stiff, add additional water by rinsing out the blender into the flour mixture until smooth, but on the thick side, so that the mixture won't flow out on the cookie sheet. A stiff batter will make 6 oven cakes that will rise to about 1/2 inch in thickness. A thinner batter could make as many as 12 oven cakes.

On a lightly oiled or non-stick cookie sheet, spoon out about 2 heaping tablespoons of the mixture for each oven cake. Arrange the Pecans or Walnuts on top for decoration and added flavor.

Bake in the preheated oven until the oven cakes are firm, but still springy to the touch, which will take about 20 minutes. The first time you make them, you might want to check the bottoms to make sure they are not burning or doughy.

These Oven Cakes can be served with Maple Syrup or your favorite topping or can even be eaten like a cookie.
