Cabbage, Carrots, Mushrooms and Snap Peas with Apricot Sauce (Chinese Style)

Ingredients

3-4 lbs. Cabbage
1 lb. Baby Carrots
1 lb. Mushrooms
1 lb. Onions
1 lb. Snap Peas
1 tbsp. Ginger, ground
Hot Sauce or Cayenne Pepper (to taste)
1-1/2 cups Apricots, pitted fresh or frozen OR
1/2 cup Apricots, dried
1/4 cup Soy Sauce or Bragg Aminos
2 tbsp. Sesame Seeds
2-3 drops Smoke flavor
1 tbsp. Corn Starch
3 cups Brown Rice cooked in 6 cups Water

Preparation

This recipe will make 6 to 8 servings as a main meal, and is great for leftovers.

We prepare this recipe in our wok with the exception of the rice which we cook in a pot on the stovetop.

Wash and clean the veggies, and peel the onions.

Place the water in the rice pot and bring to a boil.

While the water is heating, cut the cabbage and onions into bite-sized pieces and place in the wok with the snap peas and ginger. 

The small baby carrots and mushrooms can be added whole but we suggest cutting the larger carrots and mushrooms in half lengthwise before adding to the wok.

When the water in the rice pot begins to boil, add the rice, cover and lower the heat to simmer, and cook until all the water is absorbed into the rice, and then turn off the heat.

While the rice is cooking, stir-fry the veggies with a little water in the wok until they reach the tenderness you desire.

In the container of a high speed blender, place the apricots (if you are using dried apricots add 1 cup of water), soy sauce, sesame seeds, smoke flavor, and corn starch, cover and run the blender at high speed until the contents are creamy smooth.

When the veggies are cooked, lower the heat to simmer and add the sauce and mix thoroughly.

Serve over a bed of brown rice and enjoy!
