Eggplant uncheese casserole is a vegan recipe using tofu uncheese sauce and small cubed eggplant pieces with the skin left on. This recipe will serve 6 adults as a main meal, and takes about 15 minutes preparation time and about 45 minutes cooking time in a microwave oven or a little longer in a conventional oven. If you are making your own tofu, add about 30 minutes. Leftovers can be stored in the covered casserole dish in the refrigerator for a few days without loss of flavor.
Begin by washing and cleaning the eggplants and removing their stem and flower ends. We leave the skin on. Cut the eggplant in 1/4 to 3/8 inch thick slices and cut the slices into cubes and add to the casserole dish.
Peel and clean the onions, coarsely dice, and add to the casserole dish along with the oregano, basil, fennel seeds, and hot pepper. Mix the ingredients together, cover the casserole dish, and cook in the oven, mixing every 10 minutes, until the onions become semi-translucent.
Add the crushed tomatoes and tomato paste, mix thoroughly and cook for another 10 minutes.
While the casserole is cooking, place the tofu, lemon juice, turmeric, and nutritional yeast in the container of a high speed blender, cover, and run the blender at high speed until the contents are creamy smooth.
Serve and enjoy with a large tossed salad.
