This purple collard greens, onions, and rice recipe is great for either a main meal or side dish. It will serve 2 adults for a main meal, or make 4 or more servings as a side dish. If you don't have purple collard greens, you can substitute green collard greens or kale. We prepared this recipe in our microwave oven, but it can also be steamed on the stove top.
We begin by placing the rice pot and water on the stovetop, and bringing the water to boiling.
While the water is heating, we wash and clean the purple collard greens, and peel the onions.
When the water in the rice pot begins to boil, add the brown rice, cover, lower the heat to simmer, and cook until all of the water is absorbed into the rice.
Coarsely dice the onions and purple collard greens, or coarsely shred them in a food processor, and place them in a large covered baking dish. Add the lemon juice and hot pepper, mix well, cover, and cook until the purple collard greens are tender. Mix occasionally during the cooking process, and add additional water as necessary to prevent the ingredients from drying out.
When the brown rice is cooked and the purple collard greens are tender, add the rice to the baking dish and mix well, cover, and cook for another 5 to 10 minutes to blend the flavors.
