Ingredients

Broccoli and Tofu with Spiced Carrot Orange Sauce (Oriental Style)
1 lb. Tofu, firm or extra-firm
2 lb. Broccoli, fresh or frozen
1 Spanish Onion or Yellow Onion, large size
3-4 Carrots, medium size
2 Navel Oranges, medium size
2 tsp. Ginger, ground
1/2 tsp. Cinnamon, ground
1/2 tsp. Turmeric, ground
Cayenne Pepper, ground OR Hot Pepper Sauce (to taste)

Sauce
6 oz. can Orange Juice, frozen concentrate
2 Carrots, medium size
1/4 cup Bragg Aminos or Soy Sauce
1/4 cup Sesame Seeds
2 tbsp. Corn Starch
5 Dates, pitted
Smoke Flavor (a couple of drops)

Double batch of Brown Rice

Preparation

Broccoli and tofu with spiced carrot orange sauce (oriental style) is a delightful vegan recipe that can be prepared in a large covered baking dish in a microwave oven or in a wok. If you use a wok, stir fry in a little water. Total preparation time is about 30 minutes, and the cooking time is about another 30 minutes. Leftovers can be stored in a covered container in the refrigerator for a few days without losing its flavor.

Begin by putting the water in the pot for cooking the rice and place on the stove top (follow the instructions in Brown Rice).

Wash vegetables and peel the onion and carrots.  Chunk the onion into 1/2 to 3/4 inch pieces and add to the baking dish or wok. Thinly slice the carrots and place with the onions.  Cook until the onions begin to become semi-translucent.

Separate and cut the broccoli stems and florets into bite size pieces and add to the baking dish or wok with the onions and carrots.  Slice the tofu into about 3/8 inch cubes and add to the baking dish.  Mix the ingredients together and sprinkle in the ginger, cinnamon, turmeric and hot pepper and mix again.  Bake or stir-fry until the broccoli is tender but still has a little crunchiness. 

Begin to make the sauce in a high speed blender by adding the frozen orange juice and an equal volume of carrots.  Add the dates, corn starch, sesame seeds, smoke flavor, and soy sauce and blend with the cover on at high speed until the ingredients have a smooth consistency.

Wash and peel the oranges, separate into sections and cut each section in half.

Add the orange pieces and the contents of the blender to the other ingredients in the baking dish or wok. Rinse out the blender with about 1/4 cup of water, add to the other ingredients and mix well.

Reheat and stir frequently until the sauce thickens.

Serve over a bed of brown rice.  Enjoy!
