Makes about 18 standard sized muffins

Ingredients

Preparation

Preheat your oven to 350 degrees F.

Begin the recipe by placing the whole wheat or spelt flour in a mixing bowl.  Place the oatmeal in the container of a blender and run it at high speed until the oatmeal is finely chopped, and add to the mixing bowl.  Add the baking soda and mix well.

Add the peeled bananas and the raisins to the blender container, cover, and blend at high speed until the mixture is smooth.

Set out the muffin pans and cups.

Add the frozen blueberries to the flour mixture and mix well, making sure that all the berries are coated with the flour.  Add the banana-raisin mixture and mix well.  If the ingredients are too stiff, add a little apple juice, but don't let the muffin dough become runny.  It should be slightly on the stiff side.

Immediately spoon the muffin dough into the muffin cups, filling them about 2/3 full, so that the muffins can rise without overflowing the cups.

Place the muffin pans in the oven and bake for 30-35 minutes.

When the muffins are finished baking, remove the pans from the oven and let cool.  (We have found that warm or hot muffins have a tendency to stick to the muffin cups, but once they cool, the paper peels off easily.) (To enlarge the photo of the blueberry muffin, click on the photo or link)

Enjoy!

The above recipe is in keeping with God's creation intent (Genesis 1:29-31):  'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.  And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so.   God saw all that he had made, and it was very good.' (NIV)  Let no animal suffer or die that we may live!
