Cakes - Apple Cinnamon Raisin Sunflower Seed
A great substitute for pancakes, and they are more healthful, too.
1-1/2 cups Whole Wheat Flour
1/2 cup Oat Flour or Quick Oats
6 Dates, pitted
1 cup Sunflower Seeds
1/2 cup Raisins
1/4 cup Pecans
1 tbsp. Cinnamon, ground
1 teaspoon Baking Soda
In a blender:
Blenderize the banana, dates and 1 apple (washed, cored and quartered) in 1/4 cup of apple juice at high speed. Set the blender on slow or chop speed and add the second apple (also washed, cored and quartered) and chip into small pieces. Set the mixture aside.
In a bowl:
Mix the flours, baking soda and cinnamon together. Mix in the banana - date - apple mixture and sufficient additional apple juice by rinsing out the blender into the flour mixture until smooth, but on the thick side so that the mixture won't flow out on the cookie sheet. Stir in the sunflower seeds.
On a lightly oiled or non-stick cookie sheet, spoon out about 2 or 3 heaping tablespoons of the mixture for each cake. Arrange the Pecans on top for decoration and added flavor.
Bake in a preheated oven at 325-350° F. Cook until golden brown. When the Oven Cakes are firm to the touch, they should be done. The first time you make them, you might want to check the bottoms to make sure they are not burning.
These Oven Cakes can be served with Maple Syrup or your favorite topping (the oven cake - photo left- is being served with a banana - date syrup). Oven Cakes can even be eaten like a cookie.
