String beans, spinach, vegetables with uncheese sauce is a delightful vegan recipe that will serve about 8 adults as a main meal or double the number of servings as a side dish. We prepare this recipe in our wok. Leftovers can be stored in a covered container in the refrigerator for a few days, which is great if you don't want to cook every day.
Peel and dice the carrots and onions and place in the wok; wash and dice the celery and add to the wok along with the oregano and hot pepper. Stir-fry in a little water until the onions become semi-translucent.
If the spinach is in a frozen block, thaw it before adding to the wok along with the string beans, corn and peas, and continue stir-frying until the veggies are tender and hot.
Place the tofu, lemon juice, turmeric, nutritional yeast, and corn starch in a high speed blender. Cover and blend on "high speed" until creamy smooth. If there is liquid in the wok, add an additional 2 tablespoons of corn starch for each estimated cup of liquid in the bottom of the wok.
Add the contents of the blender to the cooked veggies in the wok and continue stir-frying on low heat until the sauce thickens and the veggies are thoroughly coated with the uncheese sauce (about 2-3 minutes), and turn off the heat.
