Vegetable - Rice Stuffing - Greek Style
(Quick Method)

Excellent for stuffing Acorn or Hubbard Squash, or a Pumpkin

Ingredients
2 cups Onions (diced)
2 cups White or Yukon Gold Potatoes (diced)
2 cups Yams or Sweet Potatoes (diced)
2 cups Carrots (diced)
2 Cups Celery (diced)
1 cup Green Bell Peppers (diced)
1 cup Parsley (chopped, including stems)
1 cup Walnuts (pieces)
1 cup Raisins
1-1/2 tsp. Cloves (ground)
1 cup Brown Rice cooked in 2 cups of Water

Preparation:

Wash, peel, clean and dice the vegetables.

Place the 2 cups of water in a covered glass pot (photo-left) and bring to a boil on the stovetop.  When the water boils, add the brown rice, cover the pot, lower the heat to simmer and cook until all the water is absorbed.

Place all the ingredients, except the brown rice and water, in a large microwaveable covered baking dish (photo-right), and mix together thoroughly.  Cover the baking dish and place in the microwave oven on "high" for 10 minutes.   Remove from the microwave oven and mix well.  Place back in the microwave oven and cook for another ten minutes.

Remove the cooked vegetables from the microwave oven, add the cooked rice and mix well.  The stuffing is now ready to serve or to use for stuffing a squash.

(To the left is a photo of the cooked stuffing before the rice was added.  To the right is a photo of a pumpkin that has been stuffed with the Greek style vegetable-rice stuffing.  Click on the photos or links to enlarge.)

Enjoy as a side dish or as a stuffing for Acorn or Hubbard Squash, or a Pumpkin.

The above recipe is in keeping with God's creation intent (Genesis 1:29-31):  'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.  And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so.   God saw all that he had made, and it was very good.' (NIV)  Let no animal suffer or die that we may live! (d-12)
