Bread - Spelt Barley Pumpkin Pie Rolls
Ingredients:
4 tsp. Dry Yeast
3 cups Whole Grain Spelt Flour
1 cup Barley Flour
3 tsp Cinnamon
1-1/2 tsp Ginger
1/2 tsp Cloves
1 tsp. Soya Lecithin, liquid
� cup Molasses
1 cup Pumpkin, pureed, canned
1+ cups Apple Juice, warmed to 52�C. (125� F.)

Preparation:
Add the ingredients in the order listed. Place the Dry Yeast, Flour, Cinnamon, Ginger, and Cloves in a mixing bowl or in the bread maker container. Add the Soya Lecithin, Molasses, the pureed Pumpkin, and about 1/2 of the Apple Juice.
Begin the kneading process, adding additional Apple Juice as necessary to keep proper consistency. We have found that the amount of Liquid (Apple Juice) necessary will vary from day to day. The total kneading time should be approximately 20 minutes.
Place the dough on a bed of sunflower seeds, or on a clean floured counter top or pastry sheet and form into a cylinder about 1/3 to 1/2 m. (12" - 18") long. Cut in 12 pieces and reform into 12 rolls. Place the formed rolls or a flowered baking sheet or pan (we prefer terra-cotta). We have also found that dusting the baking sheet or pan with corm meal is the best way to prevent sticking.
Baking:
Set the warming drawer of your oven to low, or set your oven on a warm setting of �40�C (110-115�F). Be careful that the oven does not overheat. Place the bread pan in the drawer or oven to raise the dough.
When the dough is slightly over double the size, turn the heat up to 175-180�C (350-360�F). Bake for approximately 30 minutes. Different ovens seem to have slightly different baking times, so we suggest that you check the bread after 25 minutes. When the crust is firm, but not crispy, the rolls are done. Remove the rolls from the oven and from the baking pans. Let rolls cool on a wire rack.
