Apricot Cream
A Whole Fruit Non-Dairy "Ice Cream"

Ingredients

4 cups Apricots, frozen
12 Dates, dried, pitted
Blueberries, frozen (optional)

Preparation

Fresh Apricots are generally quite expensive, as well as often lacking in flavor, when they are out of season; so we reserve this dessert treat until the apricots are in season, when we can go to the farm stores and buy their "seconds" at a considerable savings.

We begin by washing and cleaning the apricots, removing any bad spots, and cutting them in half so we can remove the pits.  We then place the apricot halves and pieces on a metal baking sheet that will fit into our freezer.  After several hours the apricots will freeze solid, as shown in the photo to the left.  Placed in a tightly-sealed plastic container, frozen apricots will last for approximately one month in the freezer.  (To enlarge the photo of the frozen apricots, click on the photo or link)

If you want to put blueberries on your apricot cream, as we have done, we suggest buying a pint container of fresh blueberries, washing them and freezing them, too.

Place the apricots and dates in a high speed blender, such as a Vita-Mix, and run at high speed.  Use the tamping rod to insure that all the ingredients are thoroughly cut up and blended together.  Continue running the blender and tamping the ingredients until it develops a creamy texture like ice cream.

Spoon out into individual dessert bowls.  Serve plain or with blueberries or your favorite topping.
