Sharlyne Melon

Select a ripe sharlyne melon, or let it ripen on the counter top until it develops a perfumery aroma and the rind easily gives to a light squeezing.  If the rind develops any soft spots, refrigerate immediately and eat within a day or two.  When ready to eat, thoroughly wash the outside of the sharlyne melon. Cut the sharlyne melon in half and scoop out the seeds and discard.  One melon is usually large enough for four servings.  With just the two of us, we refrigerate half for the following day.  The sharlyne melon can be cut into quarters (half of the half) and eaten with or spoon, or cut into wedges as below.  (Sharlyne Melon - cut)

The sharlyne melon can be cut into wedges and each wedge cut in half, and by carefully running a knife from the pointed end of the half wedge between the rind and the flesh, the rind can easily be removed, and the melon wedges can be served on a plate.  It's delicious!  Enjoy!
