Baked Yukon Gold Potatoes

Ingredients

Yukon Gold Potatoes

Preparation

Thoroughly wash the Yukon gold potatoes and remove any bad spots.  Try to leave as much of the skin intact as possible.  Place the potatoes on a suitable baking pan or dish.  With a knife blade, punch a few small holes in the top of each potato and bake in a conventional or microwave oven until tender. 

[Note: The yellow color of the Yukon gold potato can be very light, and may look much like a white potato, so we decided to bake a white potato with two Yukon gold potatoes to show people the difference when viewed side by side, as in the photo to the right. In a microwave oven, the approximate cooking time will be 4-5 minutes per pound of Yukon gold potatoes and about 45-60 minutes in a conventional oven.  When the potatoes are tender, remove from the oven and serve.
