Baked Potato

Ingredients:

There are several types of potatoes that are great for baking: Russet, White, Idaho, Maine, and a newer variety, Yukon gold.

Preparation:

Thoroughly clean and wash the outside of the potatoes.  Cut out any "bad" spots. If there are no cut out sections, "stab" the potatoes on top with the tip of a knife several times to a depth of about 1/2".  This will prevent the build-up of steam and keep the potato from exploding.

For quick baking, we suggest using a microwave oven, set on high for about 5 to 10 minutes, depending upon the power of the oven and the number of potatoes.   When the tip of a sharp knife or a toothpick slides in easily or the potato is soft to the quick touch (be careful not to get burned), the potato is done.

Potatoes can also be baked in a conventional oven at 350 degrees F. (175 degrees C.) for about 30-45 minutes.  This gives the potato a very nice crispy outside.  Test the potato with a knife or a toothpick slipped into a knife cut to see if it is done.  For baking in the oven, we suggest using only select potatoes so that no areas need to be cut away.  If the potatoes have cut out section, or you do not desire a crispy exterior, we suggest wraping the potatoes in aluminum foil before placing in the oven.
