Plantain Raisin Almond Rice with Allspice

2 cups - Brown Rice, uncooked
4 cups Water
3 Plantains, ripe
1 cup Raisins
1/2 cup Almonds, sliced or split
1 Onion, medium size
1 stalk Celery, large
1/4 cup Parsley, fresh chopped
3/4 tsp. Allspice, ground
1/2 tsp. Black Pepper or a little hot Red Pepper

Place the water in a large covered glass pot on the stove top, and bring to boil on high setting.  While the water is heating peel the plantains, cut in half, split lengthwise, cut each section into three strips and cut into 1/2 inch pieces.  Peel and dice the onion.  Wash and dice the celery and parsley.

When the water begins to boil, add all the ingredients and mix.  Cover the pot, lower the heat to "low" and simmer until all the water is absorbed.  Do not remix.

When the water is absorbed, turn off the heat, serve and enjoy!

The above recipe is in keeping with God's creation intent (Genesis 1:29-31):  'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.  And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so.   God saw all that he had made, and it was very good.' (NIV)  Let no animal suffer or die that we may live!  (d-10)
