Rice with Vegetables, Mushrooms and Orange
- a quick no-fry stir-fry

Ingredients:
2 cups Long Grain Brown Rice cooked in 4 cups
Water
3 medium sized Onions, chopped
6 large cloves Garlic, crushed
Cayenne or Hot Pepper Sauce, to taste
2-� cups mushrooms, fresh or dried and reconstituted
(We used a combination of Stir-fry Blend and Shiitake Mushrooms, dried and
reconstituted.)
1 lb. Broccoli Stir-Fry Mix, frozen
1 lb. Peas, frozen
6 oz. can Orange Juice, frozen concentrate
1 Tbsp. Ginger, dry, ground
2 Oranges, peeled, sectioned, cut in bite-sized pieces
4 Tbsp. Soy Sauce

Preparation:
The entire preparation time for this recipe is about 30 minutes. Begin by starting the cooking of the Brown Rice in a pot on the stovetop by placing 4 cups of water in a covered glass cooking pot (or another type of cooking pot) and bring to a boil on high heat.
While the water is heating, clean and peel the onions and garlic. Chop the onions and place in a large microwaveable baking dish with cover or in a wok. Crush the garlic and add to the baking dish. Add as much of the cayenne or hot pepper sauce as you desire, and mix well. Cover the baking dish and place in the microwave oven until the onions become translucent. This should take about 5 to 7 minutes on high heat.
If using a wok, simmer the onions, garlic, and cayenne or hot pepper sauce in a little water�no oil�until the onions become semi-translucent.
If you are using fresh mushrooms, wash, clean, and slice them and add to the onions and garlic when they are about one half way through the cooking process. Continue to cook until the onions are finished cooking. If you are using dried mushrooms, as we did for this recipe, place the mushrooms in a bowl and rinse with water. Then cover with water and let them soak for several minutes.
When the water in the rice pot begins to boil, add the rice, cover the pot, and reduce the heat to �simmer.� When all the water is absorbed, the rice is done. Remove from heat.
When the onions are cooked, add the frozen veggies, orange juice concentrate, and the ginger. If you are using dried mushrooms, drain off the soaking water and add the mushrooms to the baking dish or wok. Continue to cook in the microwave oven or in the wok until the vegetables are hot and tender. If using a microwave oven, mix well a couple of times during the cooking process. If using a wok, continue to stir-fry.
Add the soy sauce and orange pieces, mix well, and set aside.
When the rice is cooked, add the rice to the cooked veggies and mix well. If using a microwave oven, cover and cook on �high� for another 3-5 minutes. If using a wok, continue to heat for a short time and mix well.
Serve and enjoy!
