Red Lentil Soup


1 lb. Red Lentils, dry
2 Onions, medium size
2 Carrots, large
2 Celery stalks (ribs)
1 Chipotle Pepper
Smoke Flavor and Hot Sauce (to taste)

Place 6 cups of water in a 4 quart pot (with a cover) on the stovetop and bring to a boil. 

While the water is heating, wash and clean the red lentils.  When the water begins to boil, add the lentils, cover, and reduce the heat to simmer.  After about 5 minutes of cooking, the lentil skins will come off and in about 10 minutes, the red lentils will begin to fall apart.  The color of the lentils will also change from red to a yellow-gold. While the red lentils are cooking, wash and peel the onions and carrots, and cut them into chunky pieced, and place in a covered microwaveable dish.  Wash and cut the celery and add to the dish.  Add the chipotle pepper, with the stem removed, to the covered dish and cook on high heat until the vegetables are tender.

When the vegetables are tender, place them in the container of a blender with 1 cup of water.  Cover, and run at high speed until the vegetables are thoroughly mashed.  Add the contents of the blender container to the lentil pot, replace the cover, and continue simmering for another 15 to 20 minutes.

Serve with a large tossed salad and enjoy!
