Lentil Apricot Soup (Armenian Style)

Ingredients

2 Cups (1 lb.) Lentils, dried
6 Cups (1-1/2 Qt.) Water
1/2 Cup Apricots, dried, chopped
1 or 1-1/2 Cups Onions, chopped
1 Cup (approx.) Bell Pepper, chopped
1 � 28 oz. Can Tomatoes, crushed
2 or 3 Parsley Sprigs, chopped
1 Tsp. Mint, dried
� Tsp. Allspice, ground
� Tsp. Cinnamon, ground
� Tsp. Cayenne or Hot Red Pepper Sauce (adjust to taste)
1 Tbsp. Paprika

Preparation

This recipe may be prepared in a crock-pot (slow cooker) or on a stovetop.

Crock-pot Method:

If using a crock-pot, turn setting to "high." You may pre-heat the water (to save cooking time) before adding to the crock-pot. Add rinsed lentils, cover pot, and cook until lentils are starting to soften. If needed, add more hot water.

Add all of the other ingredients to the crock-pot and continue to cook at "high" until lentils, apricots, onions, and bell pepper are soft.

Stovetop Method:

If cooking on a stovetop, bring water to a boil and add lentils. When water starts to boil again, reduce heat, cover, and cook lentils, stirring occasionally. Add more water, if needed. When lentils have begun to soften, add the rest of the ingredients, cover again, and continue to cook. Stir occasionally to prevent sticking. Soup is ready when lentils, apricots, onions, and bell pepper are soft.

Serve with a large tossed salad and enjoy!
