Apricot Banana Cream
2 cups Apricots, ripe pieces
2 cups Bananas, ripe pieces
8 Dates, pitted
Blueberries, frozen (optional for topping)

This recipe will make approximately 2 cups of apricot banana cream. Prepare the fruit at least 6 hours before your wish to serve the apricot banana cream.
Wash the ripe apricots, and cut in halves or quarters and discard the pits.
Peel the ripe, brown spotted, bananas and cut the bananas into slices.
Place the apricot and banana pieces on a cookie sheet and place in the freezer until the fruit is frozen. (4 to 6 hours)
When you are ready to serve the apricot banana cream, place the pitted dates in the container of a high speed blender (Vita-Mix type) followed by the banana and apricot pieces. Cover the container and run the blender at high speed. Using the tamper, push the fruit down into the blades until the fruit becomes the texture of ice cream. Turn off the blender and serve immediately with a topping of frozen blueberries.
