Banana Cream with Apricot Pieces
A Whole Fruit Non-Dairy "Ice Cream"

Ingredients

4 cups Bananas, frozen, sliced
12 Dried Apricot Halves, unsulphured

Preparation

Begin by peeling and slicing the ripe bananas and placing them on a non-stick metal baking sheet for easy freezing.  Place in the freezer for about six to eight hours to ensure that the banana pieces are frozen solid.  Once frozen, banana pieces can be loosened from the metal sheet with a plastic spatula and stored in the freezer in a tightly sealed plastic container for about a month. 

We wash the dried apricots just before making the banana cream.

Prepare the banana cream in a high powered blender, such as a Vita-Mix. 

Place the dried apricots and frozen banana pieces in the blender container.  Cover, and run at the highest speed until the fruit becomes creamy smooth (about one minute).  To ensure uniform consistency, use the tamper to work the fruit into the blades.  (Do this only with the cover firmly in place.)

Scoop the banana cream with apricot pieces into individual serving bowls.  Serve "as is" or with your favorite topping.
