Pasta (Spaghetti and Macaroni) Recipes
Zucchini and Yellow Squash with Penne and Curry Sauce

Ingredients

1 Onion, large, coarsely diced
1-1/2 tbsp. Garlic, crushed
3-4 Carrots, medium, sliced
2 Zucchini Squash, medium
1 Yellow Squash, medium to large
1 28-oz. can Crushed Tomatoes
1 cup Raisins
1 cup Walnuts, large pieces
3 Apples, diced
1 tbsp. Cumin, ground
1 tbsp. Turmeric, powder
1 tbsp. Paprika, Hungarian
1-1/2 tsp Cinnamon, ground
1/4 tsp. Cayenne Pepper
1 lb. Penne Pasta, whole grain

Preparation

Our pasta recipes are prepared in what many people would consider a non-traditional quick method.  We prepare the veggies and sauce in either a large covered ceramic dish in our microwave oven or in a wok.  If cooking in a wok, stir fry the veggies in a little water at 375 degrees F. and reduce the heat to simmer when the sauce is added.

Wash and peel the onion, carrots and garlic.  Cut the onion in half from top to bottom, and coarsely dice.  Place the onions in the pot or wok.  Thinly slice the carrots and add to the onions. Crush the garlic and add to the onions.  Cook the onions, carrots and garlic until the onions begin to become translucent.

Wash and clean the zucchini and yellow squash, slice and cut into bite size pieces.  Add to the cooked onions.  Add the other ingredients, except the pasta and apples, and continue cooking until the veggies are tender (about 15-20 minutes).  Mix as necessary to ensure uniform cooking.

While the veggies and sauce are cooking, cook the pasta.  We cook our pasta on the stove top either in a regular pot or in a pasta pot.  When cooking pasta in a conventional pot on the stove top, we often found that the pasta would stick to the bottom of the pot.  Then we would pour the boiling water and cooked pasta into a colander to drain off the water.  With the pasta pot, the pasta never sticks to the bottom of the pot, and when it's cooked, all that is necessary is to lift out the inner pot and the water drains out.  Do not cook the pasta with the lid on the pot or the water will boil out between the inner and outer pot. 

Wash and cut the apples in quarters.  Remove the core, and cut the quarters lengthwise in half.  Cut the large slices across into 1/4 inch thick pieces.

When the veggies and sauce have cooked about 10 minutes, add the apples and mix well, and continue cooking until the veggies are tender.

Then add the pasta and thoroughly mix everything together.

Serve and enjoy!
