Baked Potato with Pinto Bean Sauce

Ingredients

Russet or other Baking Potatoes
Pinto Bean and Salsa Dip

Preparation

Thoroughly wash the potatoes.  A vegetable brush may be helpful, but be careful not to damage the potato skin.  For baking, it is best to select a potato that has a minimum of bad spots to remove.

You may bake the potatoes in either a microwave or a conventional oven.  If cooking fewer than four large potatoes using a microwave oven is quicker, taking only about five minutes per pound; however, the skins will not get crispy as they would in a conventional oven.  If baking in a conventional oven, bake at 350 degrees F. for about one hour. 

Place the potatoes in a glass or ceramic baking dish for baking in a microwave oven, or if using a conventional oven, place the potatoes on a rack or baking stoneware.  Before placing in the oven, use a knife to punch two or three holes in the top of each potato to allow steam to escape during baking. The potatoes are finished baking when they "give" when lightly squeezed.

When the potatoes are baked, remove from the oven, place each potato on an individual plate, and slice 3/4 of the way through each potato in both a lengthwise and widthwise direction, making four equal sized quarters.  Squeeze the four sections of a potato near the base so that the top opens outwardly, as shown in the photo above.  Spoon on a liberal amount of pinto bean and salsa sauce (dip).  The pinto bean sauce may be served cold or hot.

Enjoy with a large tossed salad.  It makes a meal.
