Dressing - Apricot Vinaigrette

Ingredients

Dressing - Apricot Vinaigrette 1 cup Apricots, ripe, pitted, packed
3/4 cup Water
1/4 cup Apple Cider Vinegar
1/4 to 1/2 tsp. Guar Gum
1/8 tsp. Stevia Extract, powder

Preparation

We make this fruity sweet-tart salad dressing in a blender. It's great on any mixed greens, or fruit and lettuce salads.

Wash, clean, and remove the pits from soft ripe apricots, and pack them into a 1 cup measure; then transfer to the blender container.

Add the other ingredients to the blender container. We suggest adding only 1/4 tsp. of guar gum in the beginning so you can achieve the desired thickness.

Cover the container and run the blender at medium speed until the contents are smooth and the dressing begins to thicken (1-2 minutes). If the dressing is thinner than desired, stop the blender, add the additional guar gum, replace the cover, and run the blender for another 1-2 minutes.

Serve and enjoy!

Leftovers can be stored in the refrigerator in a tightly covered container for a few days.
