Pickled Jalapeņo Pepper Slices

Ingredients

1 lb. Jalapeņo Peppers
3 tbsp. Salt
1/2 cup White Vinegar
1/2 cup Water

Preparation

Thoroughly wash the Jalapeņo Peppers and slice into rings about 1/8" or less in thickness (leave the seeds in, but throw away the stems).  (To enlarge the photos, click on the photos or links)

 

Heat in the microwave for 5 minutes. (To enlarge the photo of the cooked jalapeno pepper slices, click on the photo or link)  Place the heated Jalapeņo Pepper slices, Salt, Vinegar, and Water in a jar with a tight seal.  (See photo above.)

Place the lid on the jar and rotate until all the salt is dissolved.  If the Peppers are not completely covered with the liquid, add additional Salt, Vinegar and Water mixture in the proportions listed above.   The Jalapeņo Pepper slices can be stored in the refrigerator for about two months.   They are great on sandwiches and pizzas.

The above recipe is in keeping with God's creation intent (Genesis 1:29-31):  'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.  And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so.   God saw all that he had made, and it was very good.' (NIV)  Let no animal suffer or die that we may live!
