Pickled Jalapeno Pepper Slices


1 lb. Jalapeño Peppers
3 tbsp. Salt
1/2 cup White Vinegar
1/2 cup Water

Thoroughly wash the Jalapeño Peppers and slice into rings about 1/8" or less in thickness (leave the seeds in, but throw away the stems). (To enlarge the photos, click on the photos or links)
Heat in the microwave for 5 minutes. (To enlarge the photo of the cooked jalapeno pepper slices, click on the photo or link) Place the heated Jalapeño Pepper slices, Salt, Vinegar, and Water in a jar with a tight seal. (See photo above.)
Place the lid on the jar and rotate until all the salt is dissolved.  If the Peppers are not completely covered with the liquid, add additional Salt, Vinegar and Water mixture in the proportions listed above.   The Jalapeño Pepper slices can be stored in the refrigerator for about two months. They are great on sandwiches and pizzas.
