Banana Corn Raisin Bread (Muffin Cake)

Ingredients

2 cups Corn Flour, whole grain
4-5 Bananas, medium size
6 Dates, pitted
1 cup Raisins
2 tsp. Baking Powder
1 tsp. Cinnamon, ground

Preparation

Place the corn flour, baking powder, and cinnamon in a mixing bowl, and mix well.  Add the raisins and mix again to ensure that all the raisins are coated with the flour mixture.  If any of the raisins are sticking together, break them apart and mix again.

In the container of a high speed blender, place the peeled bananas and dates, cover, and run the blender at high speed until the contents are creamy smooth.

Add the banana-date mixture to the flour and raisins in the mixing bowl, and mix well.  The dough should be slightly on the thick side (you should be able to stand up a table spoon in the dough, but the spoon will slowly fall over).  Add a little water as needed and mix again.

Place the contents in a 2 quart covered baking dish, cover, and bake in the microwave oven for 10 minutes at 1,000 watts.  The corn bread can also be baked in a preheated conventional oven at 350 degrees F. for 20-30 minutes (check to make sure that all the dough is baked).

Remove the baking dish from the oven and set on a wire rack to cool with the cover still on for 10 to 15 minutes. 

Using a flat table knife, loosen the corn bread from the sides of the baking dish, and either cut into serving pieces in the baking dish, or invert the uncut corn bread in the baking dish onto a serving plate for cutting at the table.

Serve and enjoy.  Left over corn bread can be stored in the covered baking dish, or in another covered container or wrapped plate in the refrigerator, for a couple of days.
