Rice - Black Sticky (Sweet)

Ingredients

2 cups Black Sticky Rice, grain
4 cups Water, cold

Preparation

This recipe will make 6 to 8 servings, either as a side dish or as a bed for serving another recipe.  If you wish to make a smaller quantity, cut the recipe in half.  Left over rice can be stored in the refrigerator in a tightly covered container for a two to three days.

Begin by placing the cold water in a covered pot on the stovetop.  Turn the heat up to high and bring to a boil.

When the water is boiling, add the rice, cover, and reduce the heat to low or simmer.

Cook until all the water is absorbed.  The first signs of the water being absorbed, and rice being cooked is that it develops small steam holes, as can be see in the photo to the left.  Unabsorbed water can be checked by holding the lid on with a pot holder, lift the handle with the other hand, and tipping the pot slowly to one side, see if any water rises above the rice along the side of the pot.  If it does, allow to simmer for a little while longer.  When all the water is absorbed, turn off the heat.
