Kidney Bean "Tex-Mex" Dip and Dressing


2 - 15-oz. cans Red Kidney Beans, drained
1 - 6-oz. can Tomato Paste
4 tbsp. Brown Flax Seeds
1 Onion, small peeled
2 Garlic Cloves, peeled
1/2 cup Lemon Juice
2 tsp. Cumin, ground
2 tsp. Chili Powder
1 tsp. Sweet Basil, dried
1 tsp. Cilantro, dried
1/2 to 1 Jalapeņo Pepper
Stevia Extract, powder (a pinch or two for sweetness - adjust to taste)

Place all of the ingredients in the container of a high-speed blender, such as a Vita-Mix.  Cover and run on "high" for a minute or two until the mixture is smooth.  Use the tamper as necessary to insure uniform mixing.

If preparing this recipe as a salad dressing, thin with a little water to the desired consistency (we suggest thinning to the thickness of ketchup.

Scoop the dip into a serving bowl and/or storage container.  Serve with veggies or your favorite dip snack.  The dip is also great as a topping for baked potatoes.  The dip may be stored in the refrigerator in a tightly closed container for a few days, which make it nice for quick snacks.
