Pasta Fazool with Kidney Beans
Servings: 6 to 8

Ingredients

1 lb. Elbow Macaroni, whole grain
1 lb. Kidney Beans, dry and cooked,
or for a quicker method
4 - 15 oz. cans Kidney Beans
2 Onions, medium size, diced
4-5 Garlic Cloves, crushed
1 tbsp. Oregano, dried
1 - 2 lb. can Tomatoes, whole
1 - 6 oz. can Tomato Paste
Hot Sauce, to taste

Preparation

If using dried kidney beans, cook the beans in a slow cooker overnight; or soak them overnight and cook them in the slow cooker in the morning so that the beans are ready when the pasta fazool is prepared later in the day. Follow package directions for cooking.  When the beans are cooked, proceed as follows.

For the quick method, place the pasta water in a pot on the stovetop and turn on the heat.

While the water is heating, peel the onions and garlic.  Dice the onions and crush the garlic and place in a large covered microwaveable dish.  Add the oregano and hot sauce and mix well.  Cover and place in the microwave and cook on high for about 5 minutes until the onions are semi-translucent.

When the pasta water begins to boil, add the pasta and cook until soft, but still somewhat chewy.  When cooked, turn off the heat and drain off the water.

While the pasta is cooking, open the tomato and bean cans.  Cut the whole tomatoes into bite size pieces and add to the onions after they are cooked.  Add the tomato paste.  Drain off the liquid from the kidney beans and add the drained beans.  Mix well, cover the dish, and cook until everything is hot. Mix occasionally to ensure uniform heating.

When the pasta is cooked, add to the other ingredients in the dish, mix together, and simmer for several minutes to uniformly distribute the flavors.

Serve with a large tossed salad and enjoy!
