Potatoes and Green Beans - Italian Style

Ingredients

1 Onion, large, diced
1 Hungarian Pepper, finely diced*
2 lbs. Green Beans, fresh or frozen
3 lbs. Potatoes, 3/8-1/2 inch (1 cm.) cubes
1 28-oz. can Tomatoes, crushed with basil
2 tbsp. Oregano, dried leaves

*If you don't have a Hungarian pepper, you can substitute a small green bell pepper and hot pepper sauce (to taste).

Preparation

We usually prepare potatoes and green beans in our microwave oven on "high," but they can also be prepared in a conventional oven at 350 degrees F. (175 degrees C.)

Clean, peel and dice the onion.  Place in a large covered glass or ceramic baking dish.  Clean the Hungarian pepper; remove and discard the stem end only, leaving the pulp and seeds.  Thinly slice and dice the pepper and add, with any pulp and seeds, to the baking dish.  Mix together, cover and cook until the onions become semi-translucent.

Wash, clean and cut the green beans as desired and place in the baking dish with the pre-cooked onions and peppers.

Wash and clean the potatoes (the skins may be left on, if desired), and cut into 3/8 - 1/2 inch (1 cm.) cubes.  Add to the baking dish.

Add the crushed tomatoes and oregano, and mix well.  Cover and cook until the potatoes become softened so that a fork will easily slip into them.  Mix every 10 minutes to ensure even cooking.

Serve and enjoy!  (Goes great with a large tossed salad.)
