Soup - Black-Eyed Pea and Vegetable
This recipe is being prepared in a 6-1/2 quart slow cooker.  If you have a smaller pot, cut the recipe in half.

Ingredients

2 lb Black-eyed Peas, dried
12 cups Water
4-6 Bay Leaves
3-4 Tbsp Oregano
3-4 Celery ribs, chopped
3-4 Carrots, chopped
Parsley, few sprigs, chopped
1 Onion, large, chopped
3-4 Garlic cloves, crushed
1-6 oz can Tomato Paste
Optional: Hot sauce, to taste

Preparation

Black-eyed peas may be heated in a slow cooker (crock-pot) overnight or started in the morning. If preferred, stovetop cooking may be used for the preparation of this recipe.

Remove and discard any small stones etc. from the dried black-eyed peas. Rinse the black-eyed peas and place in the slow cooker or cooking pot. Add 12 cups preheated (boiling) water, bay leaves and oregano. Cook in covered crock-pot at high setting until black-eyed peas have softened.

Clean and wash celery and parsley. Wash and peel carrots, onion, and garlic. Chop celery, carrots, parsley, and onion and place in microwaveable covered dish along with crushed garlic. Heat until softened in microwave oven at high setting.

Add softened vegetables and tomato paste to softened black-eyed peas and mix well. (Add hot sauce, if desired.) Continue to cook in slow cooker, stirring occasionally, until flavors are blended.

Note: Remove and discard bay leaves from soup before serving.

Serve with large tossed salad and enjoy!
