1 bunch Kale, Russian (about 1 lb.) 2 Onions, large Cayenne Pepper or Hot Sauce, to taste 1 cup Brown Rice cooked in 2 cups Water (To enlarge the photo of the Russian kale, onions and rice, click on the photo or link) |
This is a relatively easy to prepare recipe that can be cooked in either a wok or in a microwave oven. It will serve two or more people as a main meal.
We begin by soaking the Russian kale in a sink full of cold water, and by placing the rice pot on the stovetop with 2 cups of water, and turning the heat up to high.
While the water is heating, wash and peel the onions and begin washing and cleaning the kale, removing any bad spots and the stem ends.
When the water in the rice pot begins to boil, add the rice, cover, reduce the heat to low, and simmer until the water is absorbed into the rice.
Finish washing and cleaning the kale, and coarsely shred the onions and kale in a food processor, or dice the onions with a knife, and cut the kale into bite-sized pieces.
Place the shredded kale and onions in a covered microwaveable dish, or in a wok, add the hot pepper, mix well and cook until the kale is tender and the onions are semi-translucent.
When the rice and veggies are cooked, combine them together and mix well. Allow the flavors to blend together for about 5 minutes, and reheat as necessary.
