Lita Squash Stew

Lita Squash Stew 2 lbs. Lita Squash, approximate weight
2 lbs. Onions
1 - 28-oz. can Crushed Tomatoes
1/2 tsp. Fennel Seeds
1 tbsp. Basil, dried leaves
1 tbsp. Oregano. dried leaves
Cayenne Pepper or Hot Sauce, to taste

This easy to prepare lita squash stew recipe can be made in a large covered dish in the microwave oven or in a slow cooker. It's great for leftovers, and can be served as is in a bowl, or on a plate over rice or pasta.

Begin by washing and cleaning the lita squash, and remove the stem and flower ends. Cut into bite sized pieces and add to the cooking container.

Peel and wash the onions, cut into bite sized pieces and add to the squash in the cooking container; add the other ingredients, mix well, cover, and cook until the veggies are tender, mixing every 10-15 minutes in the microwave.

Serve and Enjoy!
