Potato Sauerkraut Casserole with Un-Cheese Chipotle Bean Sauce (spicy)
Servings: 8-12

Ingredients

4 lbs. Potatoes
2 lb. Sauerkraut
2 - 15-oz. can White Beans
1 cup Lemon Juice
1 cup Nutritional Yeast
1/2 to 1 Chipotle Pepper

Preparation

We usually prepare this recipe in our microwave oven (on high), but it can also be prepared in a conventional oven set at 350 degrees F.

Thoroughly wash the potatoes and remove any "eyes" or bad spots (we leave the skins on), and place the potatoes in a single layer in a large covered ceramic baking pan.  You may need to stand some of the potatoes on end to fit them all into the baking dish

Bake the potatoes until they are tender.

While the potatoes are baking, open the cans of white beans, pour off any excess liquid, and place the beans in the container of a high speed blender.  Add the lemon juice, nutritional yeast, and chipotle pepper.  Cover the blender container and run it at high speed until the ingredients are creamy smooth.

Open the can or package of sauerkraut.

When the potatoes are baked, remove the baking dish from the oven and slice the potatoes (in the dish) into bite-sized pieces, being sure you cut through the bottom potato skins, and spread the pieces out in an even layer in the baking dish. 

Cover the potatoes with an even layer of the sauerkraut.  Then evenly pour on the bean sauce, and smooth out over the surface.  Use a fork to work some of the sauce down into the potato layer, but do not mix.  Place the baking dish back into the oven and bake until  the sauce has become firm and slightly darkened on the surface.  This takes about 10 minutes in the microwave oven.

Remove the potato sauerkraut casserole from the oven, sprinkle on some paprika, and serve with a large tossed salad.
