Lima Bean and Cabbage Soup
Serves 8

Ingredients

1 lb. Baby Lima Beans, dried
4 lbs. Cabbage
1 lb. Carrots
2 Onions, medium size
4-5 Garlic, cloves
1 - 28-oz. can Crushed Tomatoes
1 tbsp. Oregano, dried leaves

Preparation

We prepare this lima bean and cabbage soup recipe in our 6-1/2 quart slow cooker (Crock Pot).  If you have a smaller slow cooker, or wish to make a smaller batch, cut the recipe in half.

We begin the night before we wish to eat the lima bean and cabbage soup by turning on the slow cooker to "high", and heating 8 cups of cold water in a pot on the stovetop to boiling.

While the water is heating, clean and wash the lima beans, and place in the slow cooker.

When the water on the stove top begins to boil, turn off the heat and carefully pour the hot water into the slow cooker with the lima beans.  Add the oregano and mix. Cover the slow cooker, and reduce the heat to "low".

In the morning, wash and peel the onions, garlic, and carrots, and wash and clean the cabbage.  Finely shred the veggies in a food processor.

We prefer to precook the shredded veggies in a covered glass dish in our microwave oven before adding to the slow cooker to reduce the cooking time.  After adding the veggies to the slow cooker, mix well, cover, and turn the heat back up to "high".

Open the can of crush tomatoes, and preheat them in the same covered dish in the microwave oven, and add to the slow cooker with the beans and veggies, and mix well.  Cover, and continue cooking on "high" until the soup begins to boil, and then reduce the heat to "low" and allow to simmer until you are ready to eat the soup.

If you wish to make a thinner soup, add some additional boiling water and mix well.

Serve with a large tossed salad and enjoy!

Any left over lima bean and cabbage soup can be stored in the cooled, covered slow cooker pot in the refrigerator for a few days.
