Cabbage Carrots Onions Peas and Tofu (Chinese Style)


1 Cabbage, head
1 lb. Carrots
1 lb. Onions
1 lb. Peas, frozen
1 lb. Tofu, firm
1 tbsp. Ginger, ground
Hot Sauce (to taste)

- Sauce-
1/2 cup Water
4 tbsp. Soy Sauce or Bragg Aminos
6 Dates, pitted
2-3 drops Smoke Flavor
2 tbsp. Sesame Seeds
1 tbsp. Corn Starch

2 cups Brown Rice cooked in 4 cups Water

This recipe can be prepared in a wok or in a large covered baking dish in the microwave oven.  This recipe makes 4 to 6 servings.

We begin by placing the rice pot with the water on the stovetop and turning the heat on to high.

While the water is heating, measure the brown rice, wash and clean the veggies, and peel the carrots and onions.

When the rice water begins to boil, add the rice, cover, and lower the heat to simmer.  Continue simmering the rice until all of the water is absorbed into the rice, and then turn off the heat.

Coarsely dice and slice the veggies and place into the wok or covered baking dish.  Add the frozen peas, ginger and hot sauce.  Mix well, and cook until the veggies are almost tender.  If cooking in a wok, stir-fry the veggies in a little water.

While the veggies are in the final stage of cooking, slice and cut the tofu into small cubes.

Add the sauce ingredients to the blender container, cover and run the blender at high speed until the ingredients are creamy smooth.

Add the tofu and sauce to the veggies, mix well and cook until the sauce thickens and the tofu is heated.

Serve over a bed of brown rice and enjoy!
