Broccoli, Cabbage, Corn, Onions Stir-Fry (Chinese Style)

Ingredients

4 lbs. Broccoli, fresh or frozen florets
3 lbs. Cabbage
2 lbs. Baby Corn, canned
2 lbs. Onions
1 lb. Carrots
4-5 Celery, ribs
1-1/2 tbsp. Ginger, ground
1 Chipotle Pepper
4 Dates, pitted
1/4 cup Soy Sauce OR Braggs Aminos
1/4 cup Corn Starch
1/4 cup Sesame Seeds
2-3 drops Smoke Flavor
3 cups Brown Rice cooked in 6 cups Water

Preparation

This no-fry stir-fry recipe will make 8 servings over brown rice, and it is also great as leftovers, so we don't have to cook everyday. If you wish to make a smaller amount, cut the recipe in half.

Place the rice pot on the stove top with the water and bring the water to a boil.

While the water is heating, measure the brown rice, and set aside until the water begins to boil. When the water is boiling, add the brown rice, cover the pot, reduce the heat to simmer, and cook until all of the water is absorbed into the rice.

While the rice is cooking, wash and clean the fresh veggies, and peel the carrots and onions.

Coarsely dice the cabbage and onions and place in the wok. Cut the celery into thin strips about 1 to 1-1/2 inches long, and add to the wok. Thinly slice the carrots and add to the wok. If using fresh broccoli, separate the florets into bite sized pieces and add to the wok (if using frozen broccoli, defrost before adding to the wok).

In the container of a high speed blender, add 1 cup of water, the chipotle pepper, the dates, corn starch, sesame seeds, soy sauce, and a few drops of smoke flavoring, cover, and run the blender at high speed until the contents are creamy smooth.

Add about 1/2 cup of water to the wok to help prevent sticking during the frying process, and add the ginger. Stir-fry until the veggies are tender, add the baby corn (cut the large one in half, if desired), and continue stir-frying for a couple of minutes to heat the corn. Add the contents of the blender, reduce the heat to simmer and continue to mix thoroughly until the sauce thickens.

Serve over a bed of brown rice and enjoy!
